After all the festivities in India as I sat on the plane making my way back to London, I decided that I would be more healthy and add more veggies into my diet. So this was my New Year resolution. Having said that it was so good to see that my whole department is going healthy too. While some are on green diet, the rest have cut down on caffeine and cigarettes. Surrounded with a positive energy in a place where I spend almost all of my day I must say that I have been meat free this whole month. Am not only proud that Jan was a meat free month but I can pat my back and say well done Lo as KJ was meat free too 🙂

How This Woman Is Ridding India of Diabetes
So lets try and change our eating habits but adding flavour to our food through veggies and get rid of those toxins in our body.
Ingredients:
- 1 cup sprouted moong (I used whole moong and soaked it in water overnight. Alternatively you can find ready made moong sprouts in the market for under a pound)
- 1 red onion sliced
- 3 cloves of garlic finely chopped
- 1 inch ginger finely chopped
- 1 tsp moong dal
- 1 finely chopped tomato
- 1 tbsp cumin
- 1 green chilly chopped
- pinch of turmeric
- 1 1/2 tbsp of home made Biryani Masala (You will find the link below)
- 1 tbsp of garam masala
- 1 cup wholegrain rice (I used Tilda)
- chopped coriander leaves to garnish (optional)
- 1 tbsp oil for frying
- Salt to taste
Method :
- Heat oil in a pot add the sliced onions and fry till they sweat.
- Now add the garlic, ginger, green chilly and moong dal and fry for about 2 -3 minutes. Do not let the garlic burn
- Add the sprouted moong beans and fry this for about a minute or two.
- Add the biryani masala and turmeric and let the powders coat the moong well followed by tomatoes and let this cook for a minute.
- Add the whole grain rice along with 3 cups of water and salt as required let this cook along with the sprouted moong.
- When the rice is half done add Garam Masala and Coriander leaves give it a quick stir and let it cook.
- You can enjoy this on its own on with any curry.
